Salisbury Steaks

Ingredients and Instructions

1 pound ground beef

1/3 cup dry bread crumbs

1/2 teaspoon salt

1/4 teaspoon pepper

1 each egg

1 each onion, sliced

1 each condensed beef broth (10.5 oz)

1 each mushroom pieces (4 oz)

2 tablespoon cold water

2 teaspoon cornstarch

Mix ground beef, bread crumbs, salt, pepper and egg; shape into 4 oval patties, each about 3/4 inch thick. Cook patties in 10 in skillet over medium heat, turning occasionally, until brown, about ten minutes; drain. Add onion, broth and mushrooms. Heat to boliling, reduce heat and simmer until beef is done, about 10 minutes. Remove patties, keep warm. Heat onion mixture to boiling. Mix water and cornstarch; stir into onion mixture. Boil and stir 1 minute serve over patties.

Stuffed Flank Steak

Ingredients and Instructions

1 pound flank steak

1 cup soft — whole wheat bread

– crumbs 1/4 cup chopped onion

1/4 cup chopped celery

1/4 cup chopped carrots

1/4 cup chopped tomato

1 tablespoon parsley flakes

1/2 teaspoon powdered thyme

1 dash pepper

2 tablespoons water

Pound steak to tenderize. Cut pocket in center of steak. Combine remaining in gredients and mix well. Stuff steak and secure opening with skewers. Broil 3 inches from heat 3-4 minutes on each side, or longer to taste. To serve cut th in slices diagonally across grain.
